Grilled wings w/ a cheddar + chive mash, drenched in a smoked peri peri gravy šŸŒ¶

Your probably thinking where has this girl been… or you may not and just wanted to see the food because your hungry like me. I don’t blame you. But before I share the recipe i have an explanation, not in too much detail but my health has been a bit higgy hagga these past months. But I’m back and better and feeling healthier and most importantly motivated, apologies for leaving you without any recipes. I’m working on my consistency. Anyway, enough with the excuses here is my garlic and herb grilled chicken wings served with a cheddar and chive sweet potato mash,  drenched in a smoked peri gravy. Enjoy !

Cooking Time: 1hr

Ingredients:

  • Raw chicken wings
  • Sweet Potatoes
  • Cheddar cheese
  • Chives
  • Oregano
  • Parsley
  • Rosemary
  • Thyme
  • Dried onion powder
  • Soy sauce
  • Garlic powder
  • Smoked salt
  • Dried red bell pepper
  • Sugar
  • Salt
  • Cumin
  • Coriander
  • Smoked paprika
  • Almond milk
  • Chicken gravy

Instructions

  1. Firstly, wash and clean the raw chicken wings and marinate it with some oregano, parsley, rosemary, thyme, dried onion powder, soy sauce, garlic powder, oxo chicken stock cube, salt and sugar. The following day grill the chicken for 40 minutes on a low/ medium heat.img_9607.jpg
  2. While the chicken is cooking, boil the sweet potatoes till slightly soft and mash with some almond milk. Add grated cheddar cheese and a tablespoon of chives, then mix till smooth. img_9608.jpgIMG_9610
  3. For the Peri gravy, add the juices from the marinade chicken to a cup of water and chicken gravy granules. Stir till the granules have dissolved. Then add smoked salt, cumin, coriander, smoked paprika, dried onion powder, soy sauce, sugar and salt. and let it thicken. And its done!IMG_9614

The combination of sweet and smokey is amazing in this dish, I recommend it for a night you want something quick and tasty. It really warms you up, especially on those cold winter nights in the UK. Thank you for reading! Have a blessed week
