Herby hybrid chicken πŸ“
Succulent chicken with two delicious seasoning selections, 1/2 spicy tandoori BBQ and the other 1/2 fresh garlic, herb, olive oil and sea salt.
Garlic is a sacred ingredient that is used as the foundation of flavour to all of my dishes. Not only food but it’s such a useful spice used for medicinal purposes, just like my good ole friend turmeric. During the cold seasons when your experiencing flu-like symptoms, I love using garlic in a tea to stop the bacteria in its tracks. And it truly works. Its taste is strong but it does the job. (serves 4 – 6)

INGREDIENTS:

(Tandoori 1/2)

  • Tandoori masala barbeque spice blend
  • 1 dry chicken stock cube
  • Cumin
  • Lazy garlic
  • Sea salt

(Mixed herb 1/2)

  • Mixed herbs
  • Parsley
  • Sea salt
  • Lazy garlic
  • Olive oil
  • Lemon juice

INSTRUCTIONS:

  1. Firstly, clean and pluck the whole chicken and pat dry with a tissue.
  2. Massage, half of the chicken with 1 tablespoon of tandoori masala, chicken stock cube, 1/2 a teaspoon of cumin, 1 teaspoon of lazy garlic, a pinch of sea salt.
  3. Do the same to the other half of the chicken but with 1 teaspoon of mixed herbs, 1 teaspoon of olive oil, lazy garlic, a teaspoon of sea salt and a small squeeze of lemon juice.IMG_5048
  4. Marinade for 1-2 hours.
  5. Once the chicken has marinaded place it in the oven for 2 hours on low/medium heat.
  6. When the chicken is crispy and brown, it is ready to be served!IMG_5059

You can serve the chicken with roast potatoes, rice, or mac and cheese it’s superb.
